Hiya Apples, i havent been able to nail down my neighbour, hence i got this from this link, its pretty accurate and straight forward but warning a time consuming dish to make..
1.5 kilo(3 lbs) lamb shoulder on the bone (have them cut it into serving pieces)
water
salt
fresh ground black pepper
1/4 cup samneh or ghee(clarified butter)
1/4 cup snoober (pine nuts)
1 large onion, chopped
1 1/2 teaspoons turmeric
1/2 teaspoon ground allspice
1 small piece of cinnamon bark or cassia
1 quantity Laban Mutboukh (recipe at bottom of this post)
Place the lamb in a pot and just cover with cold water. Bring to a boil slowly, and skim off the foam (this is blood and must be removed to be halal). When well skimmed and boiling, add salt and pepper to taste, and cover, simmering about 30 mintues.
Heat the samneh and add pine nuts. Saute until golden, remove, draining the samneh from the pan.
Add onion and fry gently until transparent. Stir in turmeric, allspice and cinnamon bark, and cook another 2 minutes. Add this mix to the simmering lamb.
Meanwhile make Laban Mutboukh and set aside.
After lamb has cooked about 1 hour, remove lid and let liquid reduce to half.
When reduced, add laban Mutboukh, shaking pan to blend it evenly. let Mansaaf simmer gently on low heat until the meat is tender and sauce thickens. If sauce must be stirred, do it carefully in one direction. Adjust seasoning to taste and remove cinnamon.
Pile Mansaaf on a platter and spinkle with the pine nuts. Served usually with hot cooked rice. To serve in the traditional way, line a platter with split hkoubiz (arabic bread), and pile on the rice, covering this with the lamb and yougurt mixture. Sprinkle with pine nuts.
Serves 6
takes about 2 hours to make.
Laban mutboukh

1 teaspoon salt

Beat the egg white until frothy and blend into the yogurt with the cornflower and salt. Stir in the same direction until well mixed.
Place the pan over medium heat, and stir constantly with a wooden spoon for best flavor. Heat until it begins to boil, stirring.
Lower heat and leave to simmer gently, uncovered about 3-5 mintues or until thick. Use as required.
Note: in Jordan they use a yogurt called jameed, which is a dry yogurt ball that must be soaked and softened in water. Since this is expensive and difficult to find in most other countries, the Laban Mutboukh is an excellent substitute for the jameed.

hahaha beef kare-kare is a Pinoy dish/food. It is one of the His Highness King of my palace favorite Pinoy food:))) it is mixed and cooked with non-sweet peanut butter and some vegetables like long beans, eggplant and others. NOT Indian curry! totally different from it.
My parent inlaws used to live in Doha, they left for good to Jordan last year...me and hubby used to visit and spend our lunch in their home on the weekend. And all the while they thought am a good Arabic chef in my house hahaha though not my mistakes it's hubbies fault he tried to cover me. But its time for a change, I must learn to do this myself.
Once you start cooking Arabic dishes youll start to learn the names...The vine leaves is one of my favourite but im afraid im not good at making it nor do i have the patience to roll them..maybe one day..lol..
Apple, Kibbeh would the Lebanese National dish, alongside tabbouli and houmous..(correct me if im wrong KH). Lebanese dinner parties would consist of all the above and possibly vine leaves cooked with rice and meat.
Altohugh kibbeh and vine leaves are not easy dishes, even i avoid them as they are very complex and time consuming...

Yeah Apple Tabbouli is scrumptious, i can eat it all day, its an easy salad to make but the parsley is time consuming to chop and clean, but its worth it and its easy...you cant go wrong with making it..
The best tabbouli I ever taste is made by my Lebanese colleague(lovely woman). uuuff I will eat tabbouli w/ bread alone the way she made it, ya salaam!

Great website and it seems the recipes are correct. But a general comment which angered Apple;P is when we try something new, it is not done properly right at te first time. Actually I did the same mistake couple (if not more) of times. Was wondering why the "sugar" is dissolving very quickly. Then SPLASH and SPRAY upon the first sip :D
make sure to distinguish between salt and sugar. Salt is mainly used for cooking and sugar is mainly used for sweets, coffee and tea. DO NOT swap roles :)
Also make sure to distinguish between ground black pepper and ground roasted coffee.

1 Kg Flour
1 1/2 cup sugar
1/2 cup milk powder
1 TBSP active dry yeast
1 cup butter
1 TBSP mahlab (think it is known as St. Lewis Cherry powder)
2 1/2 to 3 cups warm water
mix dry ingredients and then add butter and water.
leave to dough to rise
roll dough balls to the size you like. for easy handling, make it a circle of 10 cms diameter.
place the rolls in the baking tray. cover with clean cloth and leave to rest for some 15 minutes. bake and enjoy

Its true, you need practice to perfect a dish..gosh even with some dishes ive cooked many times, i still dont get it right...
Great website and it seems the recipes are correct. But a general comment which angered Apple;P is when we try something new, it is not done properly right at te first time. Only thing s that one has to try again. Personall, I did many funny things till am able to cook properly. Even sometimes do or invent new things.
BTW. Lately I have succeeded to do our famous ka3k. It is 90% similar to what we get in Lebanon. Ate it with zaatar and Picon. Yummy :)
