Moon sighting?

Just something that occured to me, that I'm sure one of our good Muslim brothers can clear up.
If the moon is spotted tonight - say 6pm, when does Ramadan (fasting) actually start?
(And before you ask, I want to make sure that if I walk 30 minutes to a restaurant I don't get evicted half way through my meal!)
It is always next day .... from the Time of "Farj" prayers which is normally at 3:45AM (depending on sunrise)
Lets say moon is seen today at 6pm so we will carry on eating till next day early morning until 'Farj Prayers' from the time Fajer Prayer is heard we (Muslim) will stop eating till Evening 'Maghrib Prayers' (Sunset) which is normally at 18:10 hrs. time will be depending on sunset.
You can eat as much as you can from any resturant ... ^_^
till tomorrow morning prayer (Fajar), after that you have to avoid eating food in public till the evening prayer (Mughrib)..
same goes till the Eid day ..i.e. for a month, it can be 30 or 29 days...
The new Hijri month will start the following day of sighting of new moon. Ramadan is the 9th month of Hijri month and fasting will begin on 01 September 2008. But the night prayers will begin today.
Ramadan begins the next day after the MOON is SIGHTED...
The new moon means the beginning of a new month as per ISLAMIC CALENDAR...

I am aware that it will start tomorrow, inshallah, however I'm just worndering about the actual timing. Are you saying that if the moon is seen tonight at 6, then fasting will commence at dawn tomorrow?
My point really was, what if it's seen at say 3 or 4pm as has been known to happen? Do you start fasting from the sighting or is it always the next day?
Ramadan will start on Monday, September 01.
