Carrot Cake

Where in the whole of Qatar can a good Carrot Cake be found?

Essential criteria:
Moist but not damp - a dry carrot cake is a crime, but excessive moisture is just wrong. Should be moist - like kissing a lovers lips.

Sweetness but not sugary - should have the taste sensation of a sweet summers day.

Light but not fluffy - should have the texture of a cloud not a sponge.

Anyone know where such a bounty can be found?

Yeah yeah ... but be careful with too many bones and gelatin. You will end up with carrot mousse or jelly.

Had some bad cheesecakes - often glutenous and with lots of gealtine used asa thickening agent, tastes gloopy and poor.

Had some bad carrot cakes too, if you like icing you should try an entenmann's for a store bought cake it has about the same height in icing as it did cake, very sweet but sinfully enjoyable.

Ahhhhmmmm, you can replace anywhere from 1/2 a cup to a cup of the oil with blood. You might also want to leave the salt out then and shorten baking time to 25 minutes to compensate for the quicker setting of you uhhmm "flavorants"

Let me know how it turned out :)

By Dracula• 15 Oct 2008 23:27

where's the blood??

should be at least 1/4 litre of blood in your recipe :)

Here is a recipe I've used in South Africa. Haven't tried it here yet as my baking "experiments" meet with mixed results: I'm used to baking at 3500feet above sea level :)

Carrot Cake

3 cups grated carrots

2 cups white flour

2 teaspoons granulated sugar

2 teaspoons baking powder

2 teaspoons baking soda

2 teaspoons cinnamon

¼ teaspoon salt

4 eggs

1 ¼ cups vegetable oil

1 cup roughly chopped pecans

Cream Cheese Icing for Carrot Cake, see recipe

Mix the sugar and oil. Add eggs, beating after each one. Add carrots. Sift the dry ingredients together, and stir them in. Butter a 9x13 pan, pour in the batter and bake at 325° for 40 minutes. Top with Cream Cheese Frosting for Carrot Cake.

Serves 12 to 16

Cream Cheese Icing for Carrot Cake

8 ounces cream cheese, softened

¼ lb. butter, softened

1 lb. powdered sugar

1 teaspoon vanilla extract

With the butter and cream cheese at room temperature, mix everything together well (This is the kind of thing food processors are made for) and apply to your carrot cake.

Sour cheesecake? - sounds like it might have gone off or not made with enough care. Should have a refined and gentle sweetness from the crumble base with a thick and rich creamy texture top that is a smooth contrast. A good tip is to make a sugar syrup whisked into the mascapone cheese; a granulated or refined sugar gives a gritty texture and taste that is as harsh as licking a sand covered stamp. The sugar syrup is also good for binding the breadcrumb base but for better effect adding golden syrup warmed with ginger gives a nice taste contrast to the fluffy top.

I would desribe a Cheesecake but fear it may cause some excessive excitements and perhaps leakage amongst those with a weak bladder or prone ot over-excitement.

If you cant enjoy food and appreciate the simple pleasures of cake then you have not had the right cakes.
