I love to cook and am considering a contract in Doha. What do you substitute for prosciutto, andouille sausage, in recipes? Can you find file powder? red pepper? cajun spices - no salt variety?
Well, File is simply ground to a powder sassafrass leaf. Not sure if you can get it here in Doha...as far as the other ingredients, you can sometimes find Tony Chachare's seasoning at Megamart. The pork products will have to be replaced with beef or chicken substitutes...you can find Eckrich sausage at Megamart and sometimes Carrefours, and that would be as close as you can get to the andouille sausage, in my opinion. It's great to know about Megamart. I eat little red meat but like to add a small amount of sausage even to seafood or chicken gumbo.
