I would start with substituting sippy cups during the day and make the before-bed-bottle the last thing you try getting rid of. A little apple juice -water mix during the day might make him more interested in the cup. Even milk with a splash of chocolate milk can help.  At bedtime, start reading a short book to him with the bottle and you can hopefully phase the bottle out and keep going with the book. When you are ready to drop the night time bottle, you just have to do it and don't look back. Good luck!
