i am new to doha & cant seem to find a good place to buy stuff like good cooking chocolate, sugars as in brown, muscovado, confec sugars. tried carefoure & lulu but they dont seem to have it. is there some specific store that caters to out of the way stuff for cooking, baking etc.
All such ingredients are available in most of the big supermarkets (Lulu, Carrefour, FFC etc.). Please ask one of the staff to assist you if you dont find.
Baking chocolate -- I usually head to the candy aisle in Carrefour or someplace and buy a few of the 70% cocoa bars. That's worked for me. Sugars I find in MegaMart, in the Centre. I confess, though, Doha sucks for finding stuff you've relied upon back home -- like REAL Vanilla (or other flavorings), different flavoured chips, powdered buttermilk, espresso powder, stuff like that. I usually bring it back with me or order online and have it shipped here. Tavola (in Royal Plaza and City Centre) might carry a few things now, but they're more into equipment, not ingredients.
The Carrefour brand cooking chocolate is very good. Further all the other stuff you want is available in Megamart. But like all things, we depend on supply from abroad and stuff might not is always readily available. So you buy it when you see it, not when you need it.

shop rite has many things that i could not find anywhere else.it is near al matar and al rawnaq
I can usually find all my baking needs at MegaMart. But sometimes you have to try, try again if they don't have what you're looking for.
I dont think there is one specialized shop for all what you are asking for,

Did you try FFC ( Family Food Cener )
Or Giant Stores or even Food Palace?
And if you find somthing in a certain shop today, you might not find it again in the same store the next time...

hi, try to go family food center, but in lulu hypermarket they have all that stuff..
