Cucumber salad with yoghurt, mint and red onion
A great salad to serve alongside something spicy as this cools and refreshes the palette. It’s a simple 5 ingredient salad (I’m not counting salt & pepper) perfect for summer BBQs or served with your favorite curries.
Ingredients
1 english cucumber, julienned (you can choose to cut the cucumber any way you prefer for a salad)
1/4 cup thinly sliced red onion
5-6 mint leaves, thinly sliced (chiffonade)
2 tablespoons natural yogurt
1 tablespoon lemon juice
salt & cracked black pepper to taste
Directions
Mix the yogurt, lemon juice and mint in a bowl.Cut your cucumber and red onion then toss in with the dressing.

I suggest to eliminate onions and, for color variety purpose , replace it with bell pepper (red, yellow)
Nice. Another Chinese style cumcumber salad:
Beat the cucumber with a flat head of the knife or even the cahpatti roller and then cut into sizes of your choice...idea is to have irregular shapes. Mix with thinnly chopped garlic and soya sauce and sprinkle salt to taste (take care not to use the normal qty. of salt as soya sauce also is salty) and garnish with freshly cut coriander and there you have a tangy tasting salad...:)
