Diamondgirl's recipe for home-made mint lemonade...
5 cups water
2 1/2 cups white sugar
2 teaspoons lemon zest
2 1/2 cups lemon juice
handful of mint leaves
make the sugar syrup which you should chill before using:
heat water and sugar, stirring until sugar is dissolved
add lemon zest and lemon peel
chill in refrigerator
to make the lemonade mix the sugar syrup with sparkling mineral water ( I like Pellegrino best) to taste in a big jug. Start with equal quantities of both but you may want to add more sparkling mineral water according to your taste. Lighly bash some mint leaves and add to the jug.
Fill tall glasses with crushed ice and thin slices of lemon. Pour the mixture over the crushed ice and enjoy!!!
