Up north Himachal is the best according to me(plus the best hash in the world..manali cream)..for those who really love it..
down south..kerala is beautiful..backwaters and high ranges(good quality weed here too)..if you like tropical climate..
Goa is also great fun..nice beaches and genuine tourist place( in terms of locals not pestering/gawking at you)..party time in dec/jan
Rajasthan also beautiful if u want to see old forts,bit of history n desert life..
North east..darjeeling and the tea plantations alsoawesome awesome
want to rough it out..take a train trip north to south or east to west..
thing is if you really want to see India,u need at least 3 months to have a good idea of the country and its diversity..lots of western backpackers do that..
if you have only a week,go to himachal/goa/kerala if you want natural beauty n relaxed surroundings..(i guess u want 2 relax ,right?)..but make sure u chk hotels n bookings,end of the year is the main tourist season..
