I managed to hire a maid, and she is quite decent. She is a very very hard working girl, and I'm - so far - satisfied with her. She has her own mobile phone because I'm out of town a lot and I need to call her to check up on her when I am away.

You have the right to set your rules and she has to follow them. If she doesn't like it, then she can leave. You do not have to put up with anyones crap in your house.

I don't think you need proof or need to wait until you catch her red-handed. It makes it just awkward and difficult. Sit and speak with her. Let her know what what she is doing is unacceptable. Give her a chance to explain. If you are ok with it and comfortable, then give her another chance to prove she is worthy of the job. If you say she is lazy and you cannot deal with her non-sense, just replace her.

Maids are not easy to deal with. All the bla bla bla about maids and their rights is full of crap, so good luck doing what You think is right.
